CREAMY HUMMUS RECIPE

Ingredients:

-1.5 cups cooked chickpeas

-¼ cup fresh lemon juice(adjust to your own preference)

-¼ cup tahini

-1 small garlic clove, minced

-2 Tbsp extra virgin olive oil (extra olive oil for garnish)

-½ teaspoon ground cumin

-½ teaspoon salt or adjust to your own preference

-2–4 tablespoons cold water (as needed only)

-½ teaspoon baking soda or less (this is optional, the purpose of this is for a for smoother hummus)but don’t put more because it gives a sharp and butter aftertaste.

GARNISH:

-Paprika or sumac

-whole and boiled chickpeas

-virgin olive oil

-Mint oil

-Herb oil

-pomegrenate

INSTRUCTIONS:

1: Prepare the Chickpeas

For canned chickpeas: Drain and rinse under cold water. For even smoother hummus, boil them for 10 minutes with ½ teaspoon baking soda, then drain and rinse.

For dried chickpeas: Soak half a cup of dried chickpeas overnight. The next day, cover them with fresh water, bring to a boil and simmer until soft (1 to 1 1/2 hours or so), then drain.

Step 2: Combine and blend the Tahini & Lemon Juice together

Place tahini and lemon juice in a food processor and mix for 1 minute until creamy and light. He does this until the mixture is fluffy.

Step 3: Add Garlic & Spices

Stir in minced garlic, cumin, and salt. Blend again for 30 seconds.

Step 4: Fold in the Chickpeas

Add in the chickpeas and blend for approx. 1–2 minutes. Gradually drizzle in olive oil and cold water, one tablespoon at a time, until you achieve a smooth, silky consistency.

Step 5: Taste & Adjust

Taste and adjust salt, lemon or garlic to your liking.

Step 6: Serve & Garnish

Spoon the hummus into a bowl, swirl in a little olive oil, dust with paprika or sumac. You can also garnish it with whole chickpeas, chopped parsley, or toasted sesame seeds.Serving Suggestions:Enjoy with warm pita, fresh veggies, or as a spread in sandwiches or wraps.
